Independent Restaurant Groups

Independent restaurants are built on vision, personality and the ability to create an experience guests cannot find anywhere else. But bringing that vision to life, and delivering it consistently, requires much more than a great idea or a talented chef. It requires strong systems, thoughtful leadership, disciplined operations and an understanding of how every detail affects the guest experience.

Jesse Cabell brings a lifetime of firsthand restaurant experience to M&M Consulting. He grew up in the restaurant business within his father Carmen Cabell’s respected hospitality organization, learning the standards of service, design and execution at celebrated concepts such as La Fontana Ristorante. Jesse later became a partner in Vienna 60 in New Brunswick, New Jersey, an imaginative restaurant and nightlife concept that brought the spirit of the 1960s to life through a carefully curated combination of food, cocktails, music, design and entertainment.

That experience gives Jesse a valuable understanding of what it takes to transform a restaurant concept into a complete experience. He understands the creative side of hospitality, but he also knows that creativity must be supported by excellent people, effective systems and consistent execution.

M&M Consulting works alongside independent restaurant owners to strengthen both the guest-facing experience and the operation behind it. Whether you are opening your first restaurant, improving an established concept, preparing for expansion or repositioning a restaurant that has lost momentum, we provide practical guidance and hands-on support.

Our goal is not to turn an independent restaurant into a generic corporate operation. It is to protect what makes the restaurant distinctive while building the leadership, systems and discipline required to make it stronger, more consistent and more profitable.
